Amazing Apple-Cinnamon Waffles
Autumn flavored waffles with apple and cinnamon. Great for breakfast and dessert
RECIPE
Makes approx. 4 waffles
INGREDIENTS:
– 1-2 apples
– 1 2/3 cups (4 dl) rolled oats (possibly gluten free, blended into flour)
– 0.5 cup (1 dl) flour (I used spelt, you can use a gluten free flour instead like corn, buckwheat or oat)
– 1½ tsp. baking powder
– 1 tsp. cinnamon
– 2 tbsp. maple syrup
– 1.5-2 cups (4-5 dl) plant milk (I used rice milk)
INSTRUCTIONS:
Mix all the dry ingredients.
Add maple syrup and plant milk and mix well (let the mixture sit for approx. 5-10 minutes as the oats well absorb some of the liquid making the mixture thicker)
Peel the apples. Roughly grate the apples and squish out the juice with your hands and add the grated apples to the waffle batter and mix well.
Heat up your waffle iron and make the waffles as you normally would (If you don’t have a super awesome and new waffle iron you might need to grease the iron with e.g. some coconut oil).
When the waffle is done open to waffle iron very carefully as the waffle might stick a little to the waffle iron – use a fork or something similar to help the waffle down.
Serve with vegan whipped cream or maple syrup and apple slices
