
An-apple-a-day Cake
An apple (cake) a day keeps the doctor away. I celebrated the beginning of the Danish apple season by making an easy and super tasty apple cake.
It’s vegan, glutenfrie, refined sugar free, butter/oil free and SUPER delicious 😉

An-apple-a-day Cake
Easy, delicious and healthy apple cake
Ingredients
- 90 grams buckwheat flour
- 80 grams almond flour
- 70 grams apple sauce (I used homemade)
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla sugar (or vanilla extract)
- ½ tsp cinnamon
- 1 dl aquafaba aka the liquid from a can of chickpeas (3.4 oz)
- ¾ dl coconut sugar (2.5 oz)
- 2-3 apples (peeled and sliced into thin wedges)
- 1 dl plant milk (3.4 oz)
Instructions

Add the aquafaba and coconut sugar to a bowl and whisk it for 2-3 minutes with a hand mixer until it becomes nice and foamy.

In another bowl mix all the dry ingredients together (buckwheat flour, almond flour, baking powder, baking soda, vanilla and cinnamon)

Gently mix the dry ingredients into the aquafaba mixture. Then add the plant milk and gently mix.

Gease a baking pan/tin with a little oil or vegan butter. (I used a 27x18cm or 10x7in pan) and transfer the mixture to the pan.

Add the thin apple slices to the mixture and press them a little down into the mixture. See picture.

Bake in the oven at 175C°/350F° for 25-30 minutes until dark, golden brown.

Let the cake cool before serving. I highly suggest serving it with vegan whipped cream or some vanilla icecream.
Recipe Notes
If you want the cake to be extra delicious who can add some small pieces of marcipan or chopped almonds to the mixture.
