Apple Picking Pancakes

Apple-cinnamon is a classic fall flavour combo and with good reason… because it’s SUPER delicious. So I thought… why not transfer this flavour combo to the world of pancakes 🥞🍏

Apple-Cinnamon Pancakes

Healthy apple-cinnamon pancakes with an apple-caramel topping

Ingredients

  • 150 grams apple sauce (⅔ cup)
  • 2 dl buckwheat flour (0.8 cup)
  • tsp ground cinnamon
  • ½ tsp ground cardamom
  • 1 tsp vanilla sugar or ½ tsp vanilla powder (or 1 tsp vanilla extract)
  • tsp baking powder
  • 2 dl non-dairy milk (0.8 cup)

Apple-Caramel Topping

  • 1-2 apples
  • 1-2 tbsp coconut sugar
  • ½ tsp ground cinnamon

Instructions

  1. In a mixing bowl, mix buckwheat flour, baking powder, cinnamon, cardamom and vanilla.

  2. Add the apple sauce and mix it well.

  3. Add the plant milk a little at a time until you get the consistency that you want. The pancake batter needs to be fairly thick but still spread a little when it's poured onto the pan.

  4. Let it sit for 5-10 minutes.

  5. Heat up a small pan (medium to medium-high heat). If you don’t have a non-stick pan you might want to add a little oil or vegan butter to the pan (and remember that the first pancake always turns out a little weird).

  6. Pour in a little less than ½ cup (1 dl) pancake dough to the pan.

  7. Let the pancake cook/bake until it is filled with small bubbles and there is only a little “liquid” dough left – then flip it and bake it a little on the other side.

  8. Continue until there is no more dough left.

Apple-Caramel Topping

  1. Cut around the core of the apple so that you have four chunks of apples. Thinly slice each chunk.

  2. Heat a small pan to medium-high heat and add the apple slices to the pan (I simply used the same pan as I used for the pancakes).

  3. Let them cook for a minute and then add a splash of water to help soften the apples.

  4. When the slices are nice and soft add the coconut sugar and cinnamon. Stir well so that the coconut sugar doesn't burn.

  5. Remove from the heat after 1-2 minutes and pour it on top of the delicious apple pancakes.
