
Apple Picking Pancakes
What to do with all the apples?Β πΒ When in doubt, make pancakes! πΒ Delicious apple-cinnamon pancakes PLUS a bonus recipe for an apple-caramel toppingΒ π
RECIPE
makes approx. 6-8 small pancakes
INGREDIENTS:
– 150g (5.3 oz) apple sauce (make your own: get the recipe here)
– 1 tsp cinnamon
– a pinch of cardamom
– 1Β½ tsp baking powder
– Β½ tsp vanilla powder (or vanilla essence or 1 tsp vanilla sugar)
– 1.5 dl (0.6 cup) buckwheat flour (or regular flour if not gluten free)
– 1 dl (0.4 cup) plant milk
INSTRUCTIONS:
Add buckwheat flour, baking powder, cinnamon, cardamom and vanilla to a bowl and mix well.
Add the apple sauce and mix it well until you have a nice thick dough.
Add the plant milk a little at a time until you get the consistency that you want. The pancake batter needs to be fairly thick but still spreads a little when it is poured onto the pan.
Let it sit for 5-10 minutes.
Heat a pan (if you are not using a non-stick pan you should add a little oil or vegan butter to the pan) and pour on the batter to make small pancakes.
Let them cook on medium heat until dark brown on the bottom side and then flip them over.
Top with maple syrup and a delicious apple-caramel topping π
APPLE-CARAMEL TOPPING:
– 1-2 apples
– 1 tbsp coconut sugar
– a pinch of cinnamon
Cut around the core so that you have four chunks of apples.
Thinly slice each chunk.
Heat a small pan to medium-high heat and add the apple slices to the pan (if they start to stick add a little water).
When the slices are nice and soft and the coconut sugar and cinnamon. Stir well so that the coconut sugar doesn’t burn.
Remove from the heat after 1-2 minutes and pour it on top of the delicious apple pancakes.
