
Badass Banana Nut Muffins
“This sh*t is bananas, B-A-N-A-N-A-S!” 🍌 And so are these banana nut muffins 😜 Delicious vegan and glutenfree banana muffins with walnuts and dark chocolate.

Banana Nut Muffins
Vegan and glutenfree banana muffins with walnuts and dark chocolate.
Ingredients
- 3-4 ripe bananas (300g/10.6oz without peel)
- 70 grams coconut sugar (2.5 oz)
- 180 grams brown rice flour (6.3 oz)
- 1 tsp baking powder
- ½ tsp baking soda
- 40 grams coconut oil or vegan butter (1.4 oz)
- 1 dl plant milk (0.4 cups)
- 40 grams chopped dark chocolate (1.4 oz)
- 40 grams chopped walnuts (1.4 oz)
Instructions

Peel the bananas, add them to a bowl and mash them with a fork.

Add coconut sugar and plant milk and mix well.

In a small bowl, add brown rice flour, baking powder, baking soda and a little salt if you'd like.

Pour the dry ingredients into the bowl with mashed bananas and mix it well.

Melt the coconut oil (or vegan butter) and pour it into the dough. Mix well.

Add the chopped dark chocolate and the chopped walnuts and mix it together.

Preheat the oven to 200C°/400F°.

Put 8-10 paper muffin cups on a baking tray and distribute the dough evenly into the muffin cups.

Bake the muffins in the oven for approx. 20 minutes until dark golden brown.
Recipe Notes
You can add more or less coconut sugar depending on how sweet you want the muffins to be.
