Chickpeas that taste like cake?! It sounds too good to be true but trust me… IT’S REAL! And freaking delicious!
– 2 cans chickpeas (500g drained)
– 4-6 tbsp. peanutbutter
– 4 tbsp. maple syrup
– 2 tsp. vanilla sugar (or 1 tsp. vanilla extract)
– 1 tsp. baking powder
– 1 tsp. baking soda
– 4 tbsp. oats (gluten free if desired)
– 80g dark chocolate (or vegan chocolate chips)
Blend all the ingredients except for the chocolate in a food processor or blender until smooth. Depending on the consistency of your peanutbutter you might need to adjust the amount of tbsp you use 😉 Or you can add a little liquid if it’s too dry to blend.
Roughly chop the dark choclate.
Tranfer the “dough” to a bowl and mix in the chocolate.
Line a small pan (i used a 27×18 cm/10×7 inch pan) with baking (parchment) paper.
Pour the “dough” into the pan and spread evenly.
Bake it at 180C/350F for approx. 30 minutes.
Let it cool on a rack before eating. Enjoy!
