
Cheeky Chickpea Blondies
Healthy and delicious chickpea blondies with peanut butter and dark chocolate chips 🍫🥜
Chickpeas that taste like cake?! It sounds too good to be true but trust me… IT’S REAL! And freaking delicious!
These healthy chickpea blondies are vegan and glutenfree (of course), refined sugar free and oil free 🍫🥜

Chickpea Blondies
Healthy chickpea blondies. Vegan and Glutenfree.
Ingredients
- 2 cans chickpeas (approx. 500g/17oz drained)
- 6 tbsp peanut butter
- 4 tbsp agave or maple syrup
- 2 tsp vanilla sugar or vanilla extract
- 1½ tsp baking powder
- 1 dl almond flour (½ cup)
- 75 grams dark chocolate (2.6 oz)
- 1 dl non-dairy milk (½ cup)
Instructions

Rinse and drain the chickpeas and add them to a food processor and blend for a few minutes.

Add syrup and blend again. Then add the peanut butter og blend undtil you get a ncie and smoothe mixture.

Add the mixture to a bowl. Add non-dairy milk and mix well, then add vanilla, baking powder and almond flour and mix again.

Chop the dark chocolate and mix it into the batter.

Line a pan (27x18cm/10x7inch) with baking powder and pour the mixture into it and spread it out evenly.

Bake in the oven at 180C°/350F° covenction oven for approx. 50 minutes or undtil golden brown.

Let it cool completely before serving.

VEGAN CHOCOLATE?
Are dark chocolate (chips) vegan? This is a question that I’m asked quite often, and thankfully the answer to that is YES! Cacao (which chocolate is made of) itself is vegan. While milk is sometimes added (so do look at the ingredients), there are many brands of dark chocolate that are vegan and vegan chocolate even vegan milk chocolate is becoming much easier to find 🍫
