These Christmas snacks are as healthy as they are tasty My family have made these coconut-walnut snacks every year for Christmas for as long as I can remember. I have of course given them a healthy/plant based makeover and my family actually prefer these over the “old” ones
approx. 35-40 balls
– 15 medjool dates
– 1 tbsp. maple syrup
– 100g walnuts
– 80g desiccated coconut
– 200g dark chocolate
Soak the dates in hot water for approx. 10 minutes.
Blend the dates and maple syrup in a food processor or you can use a fork and some elbow grease
Chop the walnut semi-fine and transfer it to a bowl together with the desiccated coconut.
Add the date-paste to the bowl and mix it all really well. Use your hand to mix/knead it together.
Form the mixture into small balls.
Melt the chocolate and dip the coconut balls in the chocolate.
Let the chocolate harden and store the coconut balls in an airtight container in the fridge.
