Coconutty Christmas Balls

These Christmas bliss balls are as healthy as they are tasty! They are made with dates, coconut and walnuts. Super easy to make – super delicious to eat 😆😍

My family have made these coconut-walnut snacks every year for Christmas for as long as I can remember. I have of course given them a healthy/vegan makeover. My family actually prefer these over the “old” ones now 🥥🍫

VEGAN CHOCOLATE?
Is dark chocolate vegan? This is a question that I’m asked quite often, and thankfully the answer to that is YES! Cacao and cacao butter (which chocolate is made of) itself is vegan. While milk is sometimes added (so do look at the ingredients), there are many brands of dark chocolate that are vegan and vegan chocolate even vegan milk chocolate is becoming much easier to find 🍫

Coconutty Christmas Balls

Christmas bites with walnuts and coconut. Vegan and Glutenfree.

Ingredients

  • 15 medjool dates (pitted)
  • 1 tbsp maple syrup
  • 100 grams walnuts
  • 80 grams desiccated coconut
  • 200 grams dark chocolate

Instructions

  1. Blend the dates and maple syrup in a food processor or you can use a fork and some elbow grease.

  2. Finely chop the walnuts and transfer it to a bowl together with the desiccated coconut.

  3. Add the date-paste to the bowl and mix it all really well. Use your hand to mix/knead it together. The mixture should be a little "dry" but you should still be able to make balls when you pres the mixture together (see picture)

  4. Form the mixture into small balls.

  5. Melt the chocolate and dip/cover the coconut balls in the chocolate. Sprinkle some coconut or sprinkles on top.

  6. Let the chocolate harden and store the coconut balls in an airtight container in the fridge.

Recipe Notes

The amount of dates depends on the size and juiciness of the dates you use.
