
Cute Cranberry-Orange Muffins
Amazing and healthy muffins with orange zest and cranberries 🍊 These muffins are super easy to make and they make the perfekt little snack 🧁 These healthy muffins are glutenfree, vegan #ofcourse, refined sugar free, oil/butter free and most important they taste delicious!

These muffins are more healthy than your average muffins. They’re made with brown rice and almond flour. Which offers redeeming whole grain nutrients and extra fiber.
The muffins are also naturally sweetened with agave or maple syrup, which give subtle and sweet syrup flavor to the muffins.
Last but not least, apple sauce instead of vegan butter and it works as a egg substitute too. You can also use mashed banana instead of the apple sauce with apple sauce is not your thing. It will however give the muffins a subtle banana flavour.

Healthy Cranberry-Orange Muffins
Vegan and glutenfree muffins with cranberries and orange zest
Ingredients
- 100 grams apple sauce (1 dl/0.4 cup)
- 60 grams almond flour (⅔ cup/2.1 oz))
- 120 grams brown rice flour (0.4 cup/4.2 oz)
- 1½ tsp baking powder
- 2 tsp vanilla sugar or vanilla extract
- 2 dl non-dairy milk (0.8 cups)
- 4 tbsp agave or maple syrup
- 60 grams dried cranberries (0.4 cups/2.1 oz)
- 1 orange (zest only)
Instructions

In a large bowl mix together almond flour, rice flour, baking powder and vanilla.

In another bowl add apple sauce and syrup and mix well.

Pour the apple sauce mixture and the non-dairy milk into the bowl with the flour and mix it together.

Add the finely grated orange zest to the bowl and mix well.

Lastly, add in the dried cranberries to the bowl and mix it together.

Preheat the oven to 200C° (390F°).

Put 6-8 paper or silicone muffin cups on a baking tray and distribute the dough evenly into the muffin cups.

Bake the muffins in the oven for 25 minutes until golden brown.

Let them cool before eating.
