Creamy Coconut Bowl

Creamy coconut-vanilla smoothie bowl with a lemon twistΒ πŸ₯₯πŸ‹Β 

 

RECIPE

1 serving

INGREDIENTS:
– 1 dl (0.4 cup) coconut milk
– 40g (1.4 oz) rolled oats (gluten free if desired)
– 1 tbsp. chia seeds
– 1/4 tsp. vanilla powder
– 1 dl (0.4 cup) rice milk (or other plant milk)
– Β½ a ripe banana
– 1/4 tsp. lemon zest

INSTRUCTIONS:
Add coconut milk, oats, chia seeds, vanilla powder and lemon zest to a bowl and mix well.

Let it soak for 15 minutes in the fridge (or overnight if you are busy in the morning).

Add the mixture to a blender together with the plant milk and banana and blend until you get a nice and creamy smoothie.

Pour the smoothie into a bowl and add some delicious toppings (e.g. black berries, coconut flakes and hemp seeds)
