Danish Summer Bowl

Summer in a bowl! ☀ Inspired by the Danish summer dish “Koldskål” which we eat all summer long in Denmark 🍋

Danish “Koldskål”, which directly translated means “cold bowl”, is originally made with buttermilk and eggs (😖) but this version is both vegan, healthy and way more delicious! 🍓

 

 

RECIPE

1-2 servings

INGREDIENTS:
– 70g (2.5 oz) unsalted/raw cashews (soaked for 2-4 hours)
– 1½ dl (2/3 cup) COLD water
– ½ tsp vanilla powder
– the juice and zest of ½ a lemon
– 1-2 tsp coconut sugar (or other sweetner e.g. agave sirup)

INSTRUCTIONS:
Add all the ingredients to a blender and blend it well for 1-2 minutes.

It tastes best cold so store it in the frigde until serving.

Serve with granola and summer berries.

If you want to eat it for breakfast (it’s a delicious way to start the day) make it the night before and store it in the fridge over night. In the morning shake or stir it well before serving.
