Danish Summer Bowl

Summer in a bowl! β˜€Β Inspired by the Danish summer dish “KoldskΓ₯l” which we eat all summer long in DenmarkΒ πŸ‹

Danish “KoldskΓ₯l”, which directly translated means “cold bowl”, is originally made with buttermilk and eggs (πŸ˜–) but this version is both vegan, healthy and way more delicious!Β πŸ“




1-2 servings

– 70g (2.5 oz) unsalted/raw cashews (soaked for 2-4 hours)
– 1Β½ dl (2/3 cup) COLD water
– Β½ tsp vanilla powder
– the juice and zest of Β½ a lemon
– 1-2 tsp coconut sugar (or other sweetner e.g. agave sirup)

Add all the ingredients to a blender and blend it well for 1-2 minutes.

It tastes best cold so store it in the frigde until serving.

Serve with granola and summer berries.

If you want to eat it for breakfast (it’s a delicious way to start the day) make it the night before and store it in the fridge over night. In the morning shake or stir it well before serving.
