When it comes to breakfast foods – pancakes are where the party’s at! They are quick and easy to make, super versatile, and they are always are crowd-pleaser 🥞 Who doesn’t like the feeling of eating dessert for breakfast? 😋

VEGAN CHOCOLATE?
Can you get vegan chocolate? This is a question that I’m asked quite often, and thankfully the answer to that is YES! Cacao and cacao butter (which chocolate is made of) itself is vegan. While milk sadly often is added, there are many brands of dark chocolate that are vegan and vegan chocolate even vegan milk chocolate is becoming much easier to find 🍫

Green Grinch Pancakes
Delicious green pancakes with pistachios and white chocolate. Vegan and Glutenfree
Ingredients
- 40 grams pistachios blended into a fine flour (approx. 1 dl/0.4 cup)
- 4 tbsp apple sauce
- 6 tbsp buckwheat flour
- 3 tbsp almond flour
- 1½ tsp baking powder
- ⅓ tsp almond aroma/essence
- 2 dl non-dairy milk (0.8 cup)
- 1 small handful spinach (for color only)
- 30 grams vegan white chocolate (1 oz)
Instructions

In a mixing bowl, mix buckwheat flour, almond flour, blended pistachios and baking powder.

Add apple sauce and mix well.

Add the spinach and non-dairy milk to a blender and blend very well until you get a nice green liquid. Strain the green liquid.

Add the green non-dairy milk a little at a time until you get the consistency that you want. The pancake batter needs to be a little thick but still spread when it's poured onto the pan.

Then chop the vegan white chocoalte and mix it into the batter.

Let the pancake batter sit for 5-10 minutes.

Heat up a small pan (medium to medium-high heat). If you don’t have a non-stick pan you might want to add a little oil or vegan butter to the pan (and remember that the first pancake always turns out a little weird).

Pour in a little less than ½ cup (1 dl) pancake dough to the pan.

Let the pancake cook/bake until it is filled with small bubbles and there is only a little “liquid” dough left – then flip it and bake it a little on the other side.

Continue until there is no more dough left.
