Pink Valentine Heart Cookies

Simple pink heart cookies. Vegan and Glutenfree.

Ingredients

  • 95 grams vegan butter (3.4 oz)
  • 45 grams almond flour (1.6 oz)
  • 100 grams buckwheat flour (3.5 oz)
  • 20 grams potato starch (0.7 oz)
  • 50 grams powdered sugar (1.8 oz)
  • 1 tsp vanilla sugar or vanilla extract

Pink Coloring

  • 2 tbsp non-dairy milk
  • 1 tbsp pink pitaya powder

Instructions

  1. Add the pink pitaya powder to a small bowl. Heat up the non-dairy milk and then pour it into the bowl with the pink pitaya (1 tbsp at a time). Mix VERY well.

  2. In a mixing bowl, add all the ingredients and mix it well together using your hands.

  3. Let the sit in the freezer for 1 hour.

  4. Add a piece of baking/parchment paper to the table and lay the dough on top of it. Using your hands, spread/flatten the dough out until it has a height of about ½ cm (¼ inches).

  5. You might need to wash your hands during the pressing as the dough can become sticky as you work with it.

  6. Use a heart shaped cookie cutter to cut out the dough. Re-pres the rest of dough as needed in order to cut out more hearts. Tranfer the hearts to a baking tray covered with parchment paper using a spatular.

  7. Preheat the oven to 200C°/390F°.

  8. Bake the heart cookies in the oven for 8-10 minutes. Let them cool for a few minutes and then tranfer them to a cooling rack.
