Vegetable “Meat” because you can never have too many vegetables Great for tacos, lasagna, bolognese, burritos etc. This is also a great way to sneak vegetables into meals for kids or other picky eaters
– ½ a head of cauliflower
– 50g walnuts (can be omitted)
– 1 tbsp. soy sauce (or tamari for gluten free)
– 70g tomato paste
– 2 tsp. paprika
– Salt and pepper
You can spice the “meat” according to its purpose. Like if you are using it for tacos or burritos add cumin, garlic powder, onion powder, chili powder and extra paprika.
Chop or blend the cauliflower and the walnuts semi-fine and add it to a bowl together with the rest of the ingredients. Mix well.
Spread the mixture on a baking pan/tray lined with parchment paper and bake it in the oven for 30 minutes at 175C/350F.
Remove it from the oven and stir the mixture around before baking it for another 15-20 minutes.
