Quick Quinoa-Herb Salad

Light, quick and super flavorful quinoa salad with herbs and lemonΒ πŸ‹πŸ₯—Β Great for both lunch and dinner!Β 


2 servings

– 150g (5.3 oz) quinoa
– a HUGE handful of spinach
– the juice of Β½ a lemon
– 1 tbsp of each (fresh) herb chopped: basil, parsley and thyme
– 250-300g (approx. 10 oz) cherry tomatoes (I used small tomatoes in different colors)
– salt + pepper

Rinse the quinoa and cook it as instructed on the package (I usually do 1-part quinoa to 2-part water, bring it to a boil and then turn it down to a simmer until all the water has been absorbed)

Let the quinoa cool while you prepare the rest of the ingredients.

Finely chop the spinach and the fresh herbs.

Quarter the cherry tomatoes.

When the quinoa is cold add it to a bowl together with spinach, herbs and cherry tomatoes.

Add lemon juice, salt and pepper to taste and mix it all well.

Serve as a side dish (I love serving it with falafels) or as a main meal (it’s great to bring with you for lunch)
