Zazzy Zucchini Bread

Yesterday I found some zucchinis from a local farm and was inspired to make some zucchini bread. I’ve actually never had or made zucchini bread before but it turned out super delicious and it was really easy to make 🙂

Zazzy Zucchini Bread

Vegan and glutenfree zucchini bread with dark chocolate

Servings 1 loaf

Ingredients

  • 2-3 bananas (mashed)
  • 2.5 dl buckwheat flour (1.5 cups)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp vanilla sugar (or vanilla extract)
  • 1 tsp cinnamon
  • 1 zucchini (shredded)
  • 3 tbsp maple syrup
  • 60 grams dark chocolate (chopped or use chocolate chips)
  • A few splashes plant milk (I used oat milk)

Instructions

  1. Add the mashed bananas to a bowl and add the maple syrup. Mix well.

  2. In another bowl mix together the buckwheat flour, baking powder, baking soda, vanilla and cinnamon.

  3. Add the buckwheat mixture to the mashed bananas and mix it all together.

  4. Add the shredded zucchini, dark chocolate and a few splashes of plant milk and mix well.

  5. Grease a rectangular bread pan/tin (I have no idea what they a actually called) with a little oil or vegan butter and tranfer the mixture into it.

  6. Bake in the oven at 180C°/350F° for 40-50 minutes until the bread is dark golden brown.

  7. Let it cool before eating.
