Apple Crumble

Vegan and Glutenfree apple crumble filled with fall vibes.

Ingredients

  • 750-800 grams apples (approx. 6-7 apples depending on size)
  • 2 tbsp coconut sugar
  • tsp ground cinnamon
  • 1 tsp vanilla sugar or vanilla extract (or ½ tsp vanilla powder)
  • ½ tsp ground cardamom

Crumble

  • 130 grams rolled oats (certified gluten free if necessary) (1⅓ cups)
  • 75 grams brown rice flour or almond flour (⅓ cup)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla sugar or vanilla extract (or ½ tsp vanilla powder)
  • 65 grams slivered almonds (⅓ cup)
  • 5-6 tbsp coconut oil or vegan butter
  • 3 tbsp agave or maple syrup

Instructions

  1. Preheat the oven to 180C°/350F° convection.

  2. Peel the apples and cut them into small cubes or, as I prefer, super thin wedges.

  3. Add the sliced apples to a large bowl. Add coconut sugar, cinnamon, vanilla and cardamom and mix well.

  4. Lightly grease a pan with a little oil or vegan butter (I used a 27x18 cm/10x3inch baking pan). Add the apples to the pan, spread them out and lightly press down on the apples.

  5. In a bowl, add rolled oats, brown rice flour, cinnamon, vanilla and slivered almonds and mix well. Then add the coconut oil (or vegan butter) and the syrup and "kneed" it into the oats using your hands until it's ditrubuted evenly.

  6. Pour the crumble on top of the apples (you might not need all the crumble, it depends on the sixe of your pan and how thick a crumble layer you prefer).

  7. Bake it in the oven for 40-45 minutes.

  8. Serve with vegan whipped cream or vegan vanilla icecream.
