Wonderful White Chocolate Mousse

White chocoalte mousse with a twist of lime. Vegan and glutenfree.

Ingredients

  • 3 tbsp vegan whipping cream
  • 1 tsp vanilla sugar (or vanilla extract)
  • 60 grams vegan white chocolate (2.2 oz)
  • 1 tsp lime juice
  • ½-1 lime (zest only)
  • ½ dl aqua faba aka liquid from a can of chickpeas (0.2 cups)
  • 1 tbsp powdered sugar

Instructions

  1. In a mixing bowl, add the aqua faba. Make sure the bowl is completely clean and dry. The slightest bit of water will ruin the aqua faba.

  2. Whisk the aqua faba with a hand mixer for 1 minute on highest speed.

  3. Add the lime juice to the aquafaba and whisk it for another minute then add the powdered sugar and whisk it for another 8-10 minutes. You should be able to hold the bowl upside down without the mixture moving from the bowl.

  4. In another bowl, add the vegan whipping cream and whisk it for a few minutes with a handmixer. Add the lime zest and vanilla sugar and whisk it for another minute.

  5. Melt the vegan white chocolate and pour it into the whipped cream while whisking the wripped cream with a hand mixer.

  6. Carefully add ⅓ of the whisked aqua faba to the cream/chocolate mixture and mix it carefully together. Then add another ⅓ and carefully mix it again. THen add the last ⅓ and carefully mix it.

  7. Pour the mousse into two glasses or what ever you wish the serve the chocolate mousse in.

  8. Cover the glasses and let it sit in the fridge overnight or at least 8 hours.

  9. Top it with raspberries, pomegranate or any other toppings that you enjoy.
