Delightful Danish Gingerbread Balls
These date balls are inspired by a Danish Christmas cookie called “honningkagehjerter” meaning honey-cake-hearts. They are like a heart shaped gingerbread cake covered in dark chocolate These gingerbread balls taste just like a Danish gingerbread but they are made with healthy, plantbased ingredients.
RECIPE
makes approx. 25-30 balls
INGREDIENTS:
– 20 medjool dates (soaked in hot water for 10 minutes)
– 1-2 tbsp. water
– 70-90g rolled oats (gluten free if desired)
– 30g dark chocolate
– Spices: 1 tsp. cinnamon, 1/4 tsp. ground cloves, ½ tsp. ground all spice, ½ tsp. ground ginger, 1/4 tsp. ground cardamom
INSTRUCTIONS:
Remove the pits from the dates and add them to a bowl together with the water.
Mash the dates with a fork until you get a sticky date paste.
Add the spices and mix well.
Chop the chocolate semi-fine and add it to the mixture and mix well.
Add the oats and mix it all together.
Form the mixture into small balls (you might want to sprinkle a little water on your hands to stop the paste from sticking to your hands)
Store them in an airtight container in the fridge
